Potatoes need airflow and darkness or they sprout in about five days. I lost an entire Costco bag before I figured this out and got proper bins.

Onions need totally different conditions than potatoes — more air, kept separate. Storing them together was my biggest rookie mistake and everything went bad faster.

Before refrigerators, people stored root vegetables in cellars for entire winters. These containers mimic those conditions without needing to dig a hole in your yard.

Too dry and everything shrivels. Too damp and mold takes over. Getting the humidity right was the thing that finally made everything click for me.

Light is the enemy of potatoes. One weekend I left a bag near a window and came back to something that looked like it was reaching for the sun. Never again.

Wrapping individual root veggies in newspaper sounds ridiculous until you try it and your beets last three months. My neighbor thought I was crazy until she tried it too.

Bins on the floor attract pests and trap cold air unevenly. Getting everything up on shelves was when my storage setup went from okay to actually reliable.

Burying root veggies in damp sand sounds like something from 1850 but it genuinely works better than any modern container alone. Tried it on a whim and was shocked.

After digging through five identical dark bins trying to find sweet potatoes, I started labeling everything. Saved me from opening every single container every single time.

Nothing worse than opening a bin in January and finding mouse droppings mixed in with your potatoes. Learned that lesson once and immediately invested in prevention.

Root veggies want cool but not freezing. One cold snap dropped my garage below freezing and I lost a whole bin of carrots to frost damage before I started tracking temps.

Tossing dirty, wet vegetables straight into a bin is how you get mold in three days. Proper prep before storage is boring but it's the difference between success and a rotten mess.
